These energising cookies are great for a mid-afternoon snack or to keep your energy levels up following a workout.
Ingredients
- 3 eggs, beaten
- 225g coconut palm sugar
- 15ml vanilla extract
- 150g coconut oil, melted
- 120g oat flour
- 60g coconut flour
- 180g gluten free oats
- ½ tsp baking soda
- 1 tsp himalayan salt
- 105g Berry Burn chocolate or sugar-free dark chocolate
Method
Preheat the oven to 200c and line two baking trays with parchment paper.
In a large mixing bowl, mix flours, oats, baking soda, salt together.
In another bowl, mix the vanilla essence and coconut oil together.
Slowly mix the liquid mixture into the dry mix. Then slowly stir in the eggs.
Finally, add the chocolate and using your hands, mix them in.
Roll 1 dessert spoon of the cookie dough into a small ball and place on the baking tray, making sure you leave quite a bit of space between each.
Using the back of a fork, flatten each ball slightly.
Continue to do this until you’ve used up all the mixture.
Bake in the oven for 12-15 minutes until golden brown, then leave to cool.
